Serving: ±5 cups
Ingredients:
- 3 cups rolled oats
- ½ cup nuts, roughly chopped
- ¼ cup seeds (pumpkin, sunflower or sesame)
- 1 tsp cinnamon
- Pinch of salt
- ½ cup strong Laager Rooibos tea, cooled
- ½ cup honey
- ¼ cup coconut oil, melted - you can also use canola oil
- 1 tsp vanilla extract
- ½ cup dried fruit, optional
Method
- Preheat the oven to 160°C and line a baking tray with baking paper.
- Brew the Laager Rooibos: Place the tea bag in ½ cup boiling water and steep for 7–10 minutes.
- Combine the oats, nuts, seeds and cinnamon in a large bowl.
- Whisk together the cooled rooibos tea, honey, melted coconut oil, and vanilla.
- Pour the rooibos mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the mixture evenly over the tray and gently press it down.
- Bake for 25–30 minutes, stirring once halfway through, until golden and crisp.
- Allow to cool completely on the tray; it will become crunchier as it cools.
- Stir through the dried fruit, if using, and store in an airtight container.
Serving idea: Serve with yoghurt or milk, fresh berries and a drizzle of honey.
