Ingredients:
For the Rooibos syrup:
- 1 cup Sugar
- ½ cup Water
- 2 Laager Pure Rooibos tea bags
For the fro-yo:
- 2 ⅓ cup Plain, full fat yoghurt
- ⅔ cup Double Cream
- ⅔ cup Laager Pure Rooibos Syrup
- 1 tablespoon Vanilla Extract
- Pinch of Salt
Method:
- Add the sugar and water to a saucepan on medium heat. Stir until the sugar has dissolved, then add the Laager Pure Rooibos teabags. Leave to simmer for 10 minutes, until thickened.
- Remove the teabags, then pour into a jar and set aside to cool.
- Add the ingredients for the ice lollies to a mixing bowl and whisk until smooth.
- Spoon or pour the mixture into an ice lolly mould (makes 4-8 lollies, depending on the size of your moulds).
- Freeze until solid - 5 hours or overnight.
- Remove the ice lollies from the mould before serving, and enjoy!
