    Dulce de Leche Coffee Cupcakes

    Dulce de Leche Coffee Cupcakes

    Creates 12 Cupcakes

    Ingredients

    Caramel Toffee Cappuccino Cupcakes:

    • 1 cup all-purpose flour
    • ¾ cup granulated sugar
    • 2 Tablespoon cocoa
    • 2 sachets Society Caramel Toffee Coffee
    • 1½ teaspoons baking powder
    • pinch salt
    • 4 tablespoons unsalted butter (at room temperature)
    • ¾ cup milk
    • 1 egg
    • ¼ teaspoon vanilla extract
    • ½ cup caramel (for filling)

    Frosting:

    • 224g cream cheese 
    • ½ cup unsalted butter 
    • 3 cups icing sugar 
    • ½ Sachet of Society Caramel Toffee Coffee
    • 1 pinch salt
    • ½ cup caramel

    Method

    Caramel Toffee Cappuccino Cupcakes:

    1. Heat oven to 170°C and line a 12-hole cupcake tin with paper liners.
    2. In the bowl of a stand mixer, add the flour, cocoa, Society Caramel Toffee Coffee mix, sugar, baking powder, salt, and butter and beat with the paddle attachment until it's combined. It should be a sandy consistency.
      You can also use a handheld mixer to make these cupcakes.
    3. Gradually pour in half the milk and keep mixing until combined.
    4. In a separate small bowl, whisk the eggs, remaining milk and vanilla together and pour into the flour mixture. Continue mixing until smooth but be careful not to overmix.
    5. Spoon the batter into the cupcake liners and bake on the middle rack for 20 - 25 minutes until lightly golden.

    Fill the Cupcakes:

    1. Let the cupcakes cool completely before you fill them.
    2. Use the back of a wooden spoon to make small holes in the middle of each cupcake and fill it with a small spoonful of caramel. You can either top the filling with the piece of cupcake you cut away or you can frost right on top of the filling.

     Make the Frosting:

    1. In a large bowl using a handheld or stand mixer fitted with the attachment beat the cream cheese and butter together on high speed until smooth and creamy.
    2. Add the powdered sugar, Society Caramel Toffee Coffee mix, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes until combined.
    3. Pipe Frosting on the cupcakes and decorate them with melted chocolate/ caramel bits and caramel sauce.
