Ingredients:
For the Pancakes:
- 1 3/4 cups all-purpose flour
- ½ cup Chocolate Chips
- 3 tablespoons sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 3 tablespoons unsalted butter melted.
- 2 cups milk
- 2 tablespoons lemon juice
- 1/4 cup instant coffee
- Vegetable oil for cooking
For the Coffee Glaze:
- 1 3/4 cups Icing Sugar
- 1/4 cup milk
- 1 Tablespoon Society Cappuccino - Vanilla
- pinch salt
Optional filling: Whipped Cream/ Double Cream Vanilla Yoghurt/ Vanilla Ice cream.
Method
- Heat a large nonstick skillet over medium heat.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk together the egg, butter, milk, lemon juice, and Society Vanilla coffee in a medium bowl.
- Pour the wet mixture into the dry mixture and stir until just combined (some lumps are fine). Do not over-mix. Add the chocolate chips and lightly stir.
- Add a teaspoon of oil to the skillet. Scoop 1/4 cup of the batter into the skillet for each pancake. Cook until bubbles appear approximately 2 minutes, and flip. Cook another 1-2 minutes and remove from heat.
- Repeat with more oil and batter.
- While cooking, make the glaze by combining the powdered sugar, milk, instant coffee, and a pinch of salt. Set aside.
- Serve the pancakes filled with whipped cream/ double-think vanilla yoghurt or ice cream & warm with the coffee glaze.
