Ingredients
- 1 packet Samoosa pastry
- 5 potatoes, peeled and cubed
- 1 Tbs Vegetable Oil
- 1 tsp mix of Cumin & Coriander seeds
- 1 Laager Pure Rooibos Teabag (cut open bag and remove leaves)
- 1 Onion, diced
- 1/2 tsp Turmeric
- 1/2 cup Water
- Pinch of Salt
- Handful Coriander leaves, finely chopped
Method
- In a saucepan, bring the potatoes to a simmer and heat for about 30 mins until soft and tender.
- In a pan, heat oil, spices and tea leaves for a few mins, then add onions and fry until translucent.
- Add the turmeric and potatoes, mix and mash with a fork.
- Season with salt and add water, cook for 5 mins.
- Remove from heat and allow to cool, then add chopped coriander.
- Fill each samoosa case with 2 tablespoons of filling.
- Deep fry or bake them at 180 degrees Celsius until golden brown (preferred).
- Enjoy with a cup of Laager Rooibos!
