Recipe by Tebo & Lebo Ndala
Ingredients
2 Tbls Olive oil
1 Onion, diced
Garlic, crushed and chopped
Ginger, peeled and diced
Salt and Pepper, to your taste
1 cup Red lentils
2 Tbls red curry paste
1.5 cups strongly brewed Laager Rooibos tea (Laager Citrus & Ginger flavoured Green Rooibos will also work well)
Micro herbs to garnish
Method
- In a saucepan, sauté onion, garlic and ginger until onion is soft and translucent. Season with salt and pepper.
- Stir in the curry paste. Add the dry lentils and add the tea (replacing the liquid stock).
- Let the soup simmer on low heat for 20 mins until the lentils are soft.
- Serve hot and enjoy.
