Ingredients:
For the Salad:
- 2 cups baby spinach (rich in vitamins & fibre)
- 1 cup roasted sweet potato (naturally sweet)
- 1/2 cup cooked quinoa (protein + gut friendly fibre)
- 1/4 cup pomegranate seeds (antioxidants + tartness)
- 1/4 toasted almonds (healthy fats)
- 1/4 cup feta, crumbled (extra creaminess)
For the Laager Rooibos Dressing:
- 1/2 cup brewed & cooled Laager Pure Rooibos tea
- 2 Tbsp olive oil (healthy fats)
- 1 Tbsp apple cider vinegar (gut health)
- 1 Tbsp Dijon mustard
- 1 Tsp honey
- Salt and pepper, to taste.
Method
- Roast sweet potato in the air-fryer at 180°C for 15-20 minutes.
- Cook quinoa and let it cool slightly.
- In a salad bowl, toss spinach, sweet potato, quinoa, nuts, and pomegranate together.
- Whisk together dressing ingredients. Drizzle over salad and sprinkle with feta cheese.
- For extra protein, add grilled chicken or chickpeas.
