Ingredients - Laager Rooibos Steamed Bread
45g Olive Oil
1 Onion, finely chopped
2 cloves Garlic, minced
1 TBSP Mixed Herbs
500g Green Split Peas
1 tsp Fresh mint, chopped (optional)
2 cups Laager Mint Flavoured Chamomile Rooibos tea
1 cup Vegetable stock
Salt and pepper, to taste
Method
- In a medium pot, sauté the onion and garlic in oil for 1-2 minutes. Add the mixed herbs and the peas. Stir until well coated with oil.
- Add the vegetable stock and mint. Stir through.
- Add the tea (one cup at a time) - depending on how thick you want your soup to be, add more liquid.
- Simmer for 30-35 minutes until the peas are soft, blend to a purée if you want it super smooth.
- Enjoy.
