    Laager Rooibos Immunity Support Bean Soup

    Laager Rooibos Immunity Support Bean Soup

    Servings: 6 - 8

    Serving size: 200ml

    Ingredients

    1 ½ cups (375 ml) Dried butter beans or red kidney beans

    6 teabags Tea4Kidz Rooibos tea (variant of your choice)

    2 TBSP (30 ml) Canola oil

    1 Onion, finely chopped

    1 TBSP Curry powder

    1 TBSP Tomato puree

    1 TBSP Paprika

    1 tsp Salt

    1 punnet (250 g) Button mushrooms

    1 Yellow pepper, finely chopped

    2 Red chillies (optional)

    250 g Lean or extra lean mince (optional)

    Method

    1. Brew Tea4Kidz Rooibos tea bags in 6 cups of hot water and allow to cool.
    2. Once cooled, add the beans and leave to soak overnight.
    3. In a saucepan, bring the beans in tea liquid to the boil and allow to simmer until soft, then set aside.
    4. Sauté onions in the oil until golden brown, then add peppers and mushrooms and sauté until soft. Add chilli (optional).
    5. Add the lean mince and cook until browned. (If you are skipping adding mince, then skip this step).
    6. Add curry powder, tomato paste, cooked beans and seasoning.
    7. Turn down the heat and simmer slowly until the liquid thickens.
    8. Serve this hearty and healthy bean soup with steamed bread, or rice of choice.

    Dietitians Note:

    This soup contains foods that are packed with nutrients that may support immunity:

    • Beans – a great source of zinc & dietary fibre
    • Bell peppers – contain Vitamin C
    • Mushrooms – contain Vitamin D especially if you can leave them in the sun for 15 mins
    • Canola oil – Vitamin E & Omega 3 fatty acids
    • Lean mince – a great source of lean protein
    • Low salt - is high in dietary fibre and low in saturated fats
