Rooibos is a natural meat tenderizer and therefore makes a great base for any meat marinade. We love this recipe from “A touch of Rooibos” – it’s perfect for any meat or chicken.
Ingredients
200ml strongly brewed Laager Rooibos Tea
125ml Vegetable Oil
125ml Tomato Sauce
125 ml Fruit Chutney
30ml Worcestershire Sauce
30ml Balsamic Vinegar
5 Garlic Cloves – crushedr
1 tsp Mustard or Mustard Powder
1 Onion – finely chopped
1 piece Ginger – grated (thumb size)
30ml Brown Sugar
Method
- Mix all ingredients in a saucepan on moderate heat until boiling. Simmer for 15 mins then remove from heat and allow to cool.
- Use to marinate any red meat or chicken.
