Ingredients
2 x eggs
1/4 cup Brown Sugar
1/2 cup White Sugar
3/4 cup Oil (Canola or Sunflower)
1 x cup Grated Carrots
1 x tsp Cinnamon Powder
1/2 tsp Cardamom
1/2 cup Crushed Pineapple, drained
1 x Tblsp Dried Coconut
1 x tsp Bicarbonate Soda
1 x tsp Baking Powder
1 x tsp Vanilla Essence
1 1/2 cup All-purpose Flour
1/2 cup Chopped Pecans
3/4 cup Milk steeped with Tetley Masala Chai
Method
- Preheat oven
- Grease pan
- Combine the dry ingredients and mix well
- Separately whisk eggs, oil and vanilla
- Add wet ingredients to the flour mixture and fold slowly
- Add in carrots, steeped Masala Chai milk and pecans
- Mix well
- Once combined, pour into a greased baking pan
- Bake at 180 Degrees for 25 to 30 minutes.
