Ingredients
Panna Cotta:

10g Gelatin, bloomed in a couple tablespoons of water
- 500ml Cream
- 100g Sugar
- 3 Lavender florets (extra for garnish)
- 2 Tetley Black tea bags
- 500g Full Cream Yogurt
Pears Black Tea syrup:

200ml water
- 200g sugar
- 2 Small Pears
Method
- Heat 250ml cream in a pan.
- Simmer the cream and sugar and add the bloomed gelatin, teabags and lavender off the heat.
- Allow the teabags to steep for 5 minutes.
- Add the remaining cream and yogurt and whisk until smooth.
- Pour into your desired moulds or serving glasses and chill for about 2 hours or until fully set. I used stemless wineglasses and set them at an angle for an elegant dinner party look.
- To make the pears and syrup, place 200ml water into a saucepan, add the sugar and bring to a boil and cook for 8 minutes.
- Place the pear slices and the teabags into the syrup and allow to steep for 3 minutes and then remove the tea bags.
- To serve, place the pear slices on top of the panna cotta, drop a lavender flower on top and pour over some syrup.
