Ingredients:
- 3 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4-5 ripe bananas, mashed
- 1/2 cup walnuts, chopped
- 2/3 cup melted butter
- 1/2 cup Laager Rooibos syrup
- 2 eggs, beaten
- 2 teaspoons vanilla essence
For Laager Rooibos Syrup
- 1 cup water
- 2 Laager Pure Rooibos teabags
- 1 cup sugar
Method
To make the Rooibos Syrup:
- For the Rooibos syrup:
- Boil all your ingredients until the mixture reduces to half and thickens.
- Cool and store in the fridge until ready to use.
- Preheat oven to 180 degrees C.
- Prepare and line a loaf tin with baking paper.
- Mix the melted butter with mashed bananas.
- Stir in ½ cup of the Laager Rooibos syrup, baking powder, salt, vanilla and beaten eggs.
- Fold in the flour and nuts until everything is mixed well together.
- Pour batter into loaf tin. Bake for 45-55 mins until golden brown on top.
- Use a testing skewer to test if it’s done. If it comes out clean it’s done. Enjoy!
