Ingredients
- 1 cup Laager Rooibos milk (1 cup of milk infused with 2x Berry & Apple Laager Tea4Kidz rooibos teabags and 3T honey on the stovetop and strained) allow to cool
- 1.5 cups self-raising flour - sifted
- 1.5 cups blueberries (1cup for batter, half cup for topping before baking)
- 1 mashed banana
- 1 beaten egg
- 1/4 cup choc chips
- Icing sugar for dusting over the top once baked
Method
- Preheat oven to 180 degrees Celsius.
- Combine all the ingredients, pour into a lined baking dish and top with remaining 1/2 cup blueberries.
- Bake for 15-20 min until your toothpick test comes out clean (depending on how deep your baking dish is - this baking time will vary).
- Allow to cool for 20min and dust with icing sugar.
