Coconut and Lime Marinade

As a perfect addition to chicken or fish, this marinade offers a taste of the east. Add some basmati rice and some lime wedges on the side of your chosen protein, and there’s a tasty meal for you!

Ingredients:

1 Cup coconut milk
Juice of one lime
2 Tablespoons soy sauce

1 Tablespoon fish sauce
1 Tablespoon cilantro, freshly chopped (or 1 teaspoon of dried will work too)

Method:

Mix all of the ingredients in a bowl and add your chosen protein
Stir to coat it well
Marinade for at least 30 minutes before cooking
