Summer Layered Salad with Laager Citrus & Ginger flavoured Green Rooibos Dressing

INGREDIENTS

Laager Rooibos Dressing: 

4 TBSP White wine vinegar
60 ml Laager Citrus & Ginger flavoured Green Rooibos, strongly brewed
1 TBSP Orange rind, grated 
5 cm Ginger, minced 
TBSP Golden syrup
Pinch Salt and pepper 

 

Salad:

3 cups Mixed salad 
2 Avocados, cubed 
1 can Chickpeas, drained 
400 g Cooked prawns, skinless and veined 
1 Red onion, sliced
2 Oranges, cut into segments 
30 ml Pickled ginger, chopped 
2 TBSP Parsley, chopped 

 

METHOD:

  1. Add boiling water toLaager Citrus & Ginger flavoured Green Rooibos, allow to brew for 5 minutes then allow to cool.
  2. Whisk all the dressing ingredients together. Refrigerate for 10 minutes to allow flavours to infuse. 
  3. Assemble salad into a bowl. 
  4. Drizzle with dressing. 

*You can add croutons, for that extra crunch - if desired.
