Rooibos and Ginger Granita
A summer staple for hot days around the pool! With notes of orange, ginger and Rooibos, this one is a tropical burst of fruity flavours.
1 Litre Laager Rooibos, freshly-brewed (made using 4 Laager Rooibos teabags)
3-4 Tablespoons Honey
Zest and juice of 1 Lime
Zest of 1 Orange
Juice of 4 Oranges
1 thumb-sized piece of root Ginger, chopped
1 small handful fresh Mint
- Add the ingredients to a large glass jug and leave to steep for at least 10 minutes, or even longer.
- Strain the liquid through a sieve into a shallow container with a lid. Freeze for 2-3 hours, remove from the freezer and break up any ice crystals that have formed using a fork. Return to the freezer and repeat every 1.5-2 hours one or two more times, depending on the preferred size of your ice crystals.
- Serve in small glasses, garnished with a little extra fresh mint and enjoy right away.
