|45 g||Olive oil|
|1||Onion, finely chopped|
|2 cloves||Garlic, minced|
|1 TBSP||Mixed herbs|
|500 g||Green split peas|
|1 tsp||Fresh mint, chopped (optional)|
|2 cups||Laager mint flavoured chamomile Rooibos tea|
|1 cup||Vegetable stock|
|Salt and pepper, to taste|
- In a medium pot, sauté the onion and garlic in oil for 1-2 minutes. Add the mixed herbs and the peas. Stir until well coated with oil.
- Add the vegetable stock and mint. Stir through.
- Add the tea (one cup at a time) - depending on how thick you want your soup to be, add more liquid.
- Simmer for 30-35 minutes until the peas are soft, blend to a purée if you want it super smooth.
