Laager Rooibos Split Pea Soup

Ingredients:

45 g Olive oil
1 Onion, finely chopped
2 cloves Garlic, minced
1 TBSP Mixed herbs
500 g Green split peas
1 tsp Fresh mint, chopped (optional)
2 cups Laager mint flavoured chamomile Rooibos tea
1 cup Vegetable stock
Salt and pepper, to taste

Method:

  1. In a medium pot, sauté the onion and garlic in oil for 1-2 minutes. Add the mixed herbs and the peas. Stir until well coated with oil.
  2. Add the vegetable stock and mint. Stir through.
  3. Add the tea (one cup at a time) - depending on how thick you want your soup to be, add more liquid.
  4. Simmer for 30-35 minutes until the peas are soft, blend to a purée if you want it super smooth.
  5. Enjoy.
