Laager Rooibos Popcorn

Healthy snacks for kids do not have to be boring and bland.

This healthy snack recipe will help remind your kids that healthy eating can be fun as well as help them to build a healthy relationship with food.

INGREDIENTS (Makes 10 cups)

1/2 cup                                    Popcorn kernels

2 TBSP                                    Cooking oil

1½ cups                                  *Laager Rooibos syrup

 

*For the Laager Rooibos Simple Syrup:

2 cups                                                   Water

6 teabags                                              Laager Rooibos

2 cups                                                   Castor sugar

METHOD

  1. In a small pot, bring the water, sugar and tea bags to a boil for a minute. 
  2. Reduce to a simmer until the liquid is reduced to half. 
  3. Remove the teabags and set the syrup aside to cool. 
  4. Preheat the oven to 180°C.
  5. Line 2 baking trays* with baking mats or baking paper. 
  6. In a large, heavy-bottomed saucepan over medium heat, combine the oil and popcorn kernels. 
  7. Cover the pot and wait for the kernels to pop, which might take a few minutes.
  8. In the meantime, place a large serving bowl near the stove.
  9. Cook the popcorn, carefully shimmying the pot occasionally to cook the kernels evenly.
  10. Once the kernels start popping, tip the lid just a touch to allow steam to escape.
  11. Continue cooking until the popping sound slows to about one pop per every few seconds. (If the popcorn tries to overflow the pot, just tip the upper portion of popcorn into your bowl and return it to the heat.)
  12. Dump popcorn into the serving bowl & toss it with the Laager Rooibos syrup until fully coated - try to work fast while the popcorn is still warm.
  13. Divide the popcorn onto 2 lined baking sheets and spread in an even layer.
  14. Bake in the preheated oven for 10 – 15 minutes – be sure to watch it carefully so as not to burn - flipping the popcorn every 5 minutes or so.
  15. Once fully baked and crisp, remove from the oven and set aside to cool fully. 
  16. Break the popcorn into pieces and enjoy with your kids 

Can be stored in an airtight container for 2 - 3 weeks.

*If you only have 1 baking tray, you can bake popcorn in batches (wash the tray in-between to avoid burning).
