Rooibos is a natural meat tenderizer and therefore makes a great base for any meat marinade. We love this recipe from “A touch of Rooibos” – it’s perfect for any meat or chicken.
Rooibos Meat Marinade
200ml strongly brewed Laager Rooibos Tea
125ml Vegetable Oil
125ml Tomato Sauce
125 ml Fruit Chutney
30ml Worcestershire Sauce
30ml Balsamic Vinegar
5 Garlic Cloves – crushed
1 tsp Mustard or Mustard Powder
1 Onion – finely chopped
1 piece Ginger – grated (thumb size)
30ml Brown Sugar
Mix all ingredients in a saucepan on moderate heat until boiling. Simmer for 15 mins then remove from heat and allow to cool.
Use to marinate any red meat or chicken.
