1 ½ cups Rice, cooked
¼ tsp Salt
2/3 cup Cranberries, dried
1 Egg, beaten
1/3 cup White sugar
1 TBSP Butter
1/2 tsp Vanilla essence
2 cups Laager Rooibos Cranberry and Wild Cherry flavoured Rooibos infused milk, divided.
- To infuse milk:
Bring 500ml milk to a simmer with 4 - 6 Laager Rooibos Cranberry and Wild Cherry flavoured Rooibos teabags and simmer for 5 - 7 minutes, then strain and set aside to cool down.
- Combine rice and 1 ½ cups of the infused milk and salt in a saucepan over medium heat.
- Cook and stir until creamy and thick - about 15 - 20 minutes.
- Stir the remaining milk, cranberries, beaten egg and white sugar into the rice mixture until combined.
- Continue to cook for 2 - 3 minutes until the egg is set, then remove from heat and stir in butter and vanilla essence until combined.
